Ingredients
For the dough:
250 g (2 cups) all-purpose flour
1/4 tsp salt
100 ml (a little less than 1/2 cup) water
150 g (2/3 cup) unsalted butter, softened
For the custard:
500 ml (2 cups) whole milk
1 cinnamon stick
Zest of 1 lemon (finely peeled)
250 g (1 1/4 cups) granulated sugar
60 ml (1/4 cup) water
50 g (6 tablespoons) all-purpose flour
6 egg yolks
Instructions
1. Prepare the dough:
Mix the flour, salt and water into a dough. Knead until smooth and let it rest for 15 minutes.
Roll out the dough into a rectangle, spread a thin layer of butter on it and fold it in three. Repeat this process three times for a flaky result. Let it cool for 1 hour.
2. Make the custard:
Heat the milk with the cinnamon stick and lemon peel until it is just below boiling point. Let it steep for 10 minutes and then strain.
Heat the sugar and water in a small saucepan until it forms a syrup. Do not stir; cook until it reaches 100°C (212°F) on a thermometer.
Beat the flour into the warm milk until smooth, then gradually add the sugar syrup while beating. Add the egg yolks slowly to prevent curdling.
3. Assemble the cakes:
Roll out the chilled dough into a log, cut into 1.5-inch pieces, and press each piece into a greased muffin tin.
Pour the custard into the pastry bases, filling them three-quarters full.
4. Bake to perfection:
Preheat your oven to 250°C (480°F). Bake for 15-18 minutes or until the tops are golden brown and caramelized.
Serve your freshly baked pastel de nata warm, with a sprinkle of cinnamon or icing sugar. Pair them with a strong espresso or a glass of port for the ultimate treat. Time to enjoy your homemade pastel de nata!
