Wat is een Pastel de Nata? Een gids voor de iconische traktatie van Portugal

What is a Pastel de Nata? A Guide to Portugal's Iconic Treat

If you’ve ever wandered the charming streets of Lisbon or visited a Portuguese bakery, you’ve probably come across pastel de nata: a golden, puff pastry filled with creamy custard. This small but delicious cake is a beloved symbol of Portuguese culinary tradition and has won the hearts (and stomachs) of foodies all over the world.

A piece of history

Pastel de nata originated in the early 19th century in the Jerónimos Monastery in the Belém district of Lisbon. At the time, monasteries often used egg whites to starch clothing, leaving a surplus of egg yolks. To avoid waste, monks and nuns created a variety of rich desserts, including pastel de nata.

When the monastery ran into financial difficulties in 1834, they sold the recipe to a nearby sugar refinery. This led to the opening of the now famous Pastéis de Belém, which still bakes this delicacy according to a closely guarded secret recipe.

What makes a Pastel de Nata so special?

At first glance, a pastel de nata may seem simple, but its appeal lies in the perfect balance of textures and flavors. Here’s what makes it extraordinary:

  • Puff Pastry: The outer shell is made of puff pastry, layered and baked to golden perfection, giving it a crispy, buttery crunch.
  • Silky custard filling: The inside is a luscious, creamy custard made with egg yolks, sugar and cream, lightly caramelized on top for a hint of smokiness.
  • Sprinkled Magic: Traditionally, pastéis de nata is served with a light dusting of icing sugar and cinnamon, which adds an aromatic touch.

How to enjoy a Pastel de Nata

The best way to enjoy a pastel de nata is fresh from the oven when the pastry is still warm and the custard melts in your mouth. Pair it with a cup of strong Portuguese coffee, called bica, for a classic experience.

Global love for Pastéis de Nata

Although deeply rooted in Portuguese culture, pastéis de nata have become a global sensation. From artisanal bakeries in London to coffee shops in Hong Kong, you’ll find variations on this delicacy that pay homage to their Lisbon roots.
